Recipe – German Potato Salad

Serves 6-8.

Ingredients:
3 pounds potatoes, peeled & sliced
½ cup chopped onion
2 tsp salt
½ cup mayonnaise
¼ cup vegetable oil
½ cup cider vinegar
2 Tbsp white sugar
2 Tbsp dried parsley
Ground black pepper, to taste

Directions:
1) Bring a large pot of salted water to a boil. Add peeled and cut potatoes; cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl. Add onions.
2) In a large bowl, whisk together the mayonnaise, oil, vinegar, sugar, parsley, salt and pepper. Gently stir in the potatoes and onion. Let stand for 1 hour before serving to enhance flavors.

Recipe – Apple Cabbage Salad

Serves 4.

Ingredients:
1 head cabbage
1 apple
¼ red onion
½ cup walnuts, roughly chopped
½ cup golden raisins

For the dressing:
2 Tbsp apple cider vinegar
1/8 tsp cayenne pepper
1/3 cup nonfat Greek yogurt
2 tsp honey
1 tsp fennel seeds
½ tsp salt

Directions:
1) Using a mandoline, sharp knife, or food processor, thinly slice/shred the cabbage, apple, and red onion so they resemble fine confetti; transfer to a large bowl.
2) Add the walnuts and raisins and toss gently to combine.
3) In a small bowl, whisk together all the ingredients for the dressing. Top the salad with the dressing and mix until evenly dressed.

Recipe – Watermelon Salad

Serves 15.

Ingredients:
3 Tbsp lime juice
1 cup sliced red onion
15 cups cubed watermelon
3 cups cubed English cucumber
8oz queso fresco, diced
½ cup chopped fresh cilantro
Cracked black pepper
Sea salt

Directions:
1) In a small bowl, pour lime juice over red onions. Allow to marinate while assembling the salad.
2) Gently combine the watermelon, cucumber, cheese, and cilantro in a large bowl. Season with black pepper. Toss watermelon salad with marinated onions and season with sea salt just before serving.
